    Fullarton Estate Wines is a premium Australian wine producer and a shareholder of Project Wine and Gomersal Wines. Boasting a portfolio of world class Australian wines from different South Australian wine regions, we are focused on building our brands in the Australian, Chinese and International market.


    The Fullarton Estate range of premium Australian wines exemplifies the quality and diversity of winemaking in Australia. Fullarton Estate offers wines for all occasions starting with the South Australia range that is perfect for every day enjoyment. The Langhorne Creek range offers greater richness and complexity and is ideal for sharing with family and friends.     Project Wine

    Parson's Paddock

    The Parson’s Paddock Shiraz hails from the McLaren Vale and is a classic example of a rich, full flavoured Australian Shiraz with typical plum, dark cherry and spice flavours. The Parson’s Paddock Cabernet Sauvignon has lovely aromas of chocolate and dark cherries and a richly flavoured palate of spicy ripe plum.

    Any wine lover from around the world will be able to tell you that Australia is famous for its wine. Sparklings, Whites, Reds and even Fortifieds, Australia produces them all and is exceptionally good at it. Australia's diverse range of climates, from cool and crisp to warm and dry, ensures there will always be a great location for each grape variety to prosper.


    Fullarton Estate Wines use premium fruit for their world class wines from the Australian regions below.

    Barossa Valley

    The Barossa is one of the world’s great wine regions, renowned for its food and wine, cultural experiences and easy-going lifestyle. The picturesque rolling hills of the Barossa Ranges overlook a colourful patchwork of vineyards and picture-book villages, dotted with historic churches, stone buildings, thatched-roof barns and cottages beckoning visitors to explore.


    Located about 70km north-east of Adelaide, the Barossa Valley is world famous for its Shiraz. There is a total of 13,256 hectares of vineyard area planted in the Barossa. The majority of plantings are Shiraz, with other varieties such as Grenache, Cabernet Sauvignon, Mataro, Riesling and Semillon also part of the Barossa wine tapestry. The Barossa is also home to some of the oldest continuously producing vineyards in the world.

    McLaren Vale

    McLaren Vale has the warmth and feel of a country town, with the distinct advantage of being 40 minutes from Adelaide.
    The area is only minutes away from the stunning coastline and beaches that influence so much of our lifestyle, culture and primary production. McLaren Vale wines are distinguished by their ripeness and elegance.


    Shiraz is by far the most important variety for the region, accounting for about 50% of the total crush. Not surprisingly it is what McLaren Vale is best known for. The region’s moderate climate and diverse terroir means no two are alike. The same conditions that are good for Shiraz are good for alternatives. The region also excels at producing Grenache, Cabernet Sauvignon and Chardonnay.

    Langhorne Creek

    Langhorne Creek is situated in a beautiful corner of the world and is a gateway to the stunning Fleurieu Peninsula. While warm sunny days are a feature of our climate, the region benefits from the cooling breezes of nearby Lake Alexandrina, home to teeming bird life and great sailing experiences. Regarded as one of the best-kept secrets in Australian Viticulture, Langhorne Creek is one of Australia’s oldest and most significant wine regions.


    Traditionally a red wine growing district well known for production of outstanding Cabernet Sauvignon and Shiraz. These two red wine grape varieties constitute approximately 70% of the total vineyard plantings in the region. Langhorne Creek reds are consistent and bold wines that provide flavoursome ‘drink now’ qualities yet also classically have enough structure to provide excellent cellaring potential.

    Adelaide Hills

    The Adelaide Hills is Australia's most vibrant cool climate wine region.  The region is located in the Mount Lofty Ranges east of Adelaide and acknowledged internationally for its distinctive premium wines, viticulture and stunning scenery.   It is also one of the largest geographical wine regions in Australia, and amongst the most diverse in terms of climate, soil and topography. The region consists of two registered sub-regions, Lenswood and Piccadilly Valley.


    With climatic differences, the vineyards tend to be small in area and often steep. Hand pruning and picking is often a necessity as well as a choice.  This diversity plays host to a range of grape varieties and wine styles. In the coolest areas, the classic Chardonnay and Pinot Noir varieties produce exemplary sparkling and table wines. Riesling, Sauvignon Blanc and Pinot Gris enter into the picture as the temperature rises while many unique vineyard sites, combined with careful management techniques, allow the successful ripening and flavour profile development of Cabernet Sauvignon, Cabernet Franc, Shiraz and Merlot.

    Fullarton Estate Wines is a shareholder of Project Wine, a state of the art Grape Processing, Winemaking and Storage facility where all the Fullarton Estate wines are produced. Established in 2001 and strategically located less than one hour from some of South Australia’s best known wine regions, including Adelaide Hills, McLaren Vale and Langhorne Creek, and less than two hours from the Limestone Coast and Barossa Valley.


    Senior Winemaker Peter Pollard heads up an experienced and enthusiastic team, including three full time winemakers, who are looking forward to the challenge of building the Winery’s reputation as a high quality wine producer.

    Winemaker - Peter Pollard

    Peter was introduced to the wine industry at a young age and quickly developed a passion. While studying for a degree in Oenology at the University of Adelaide, Peter completed a vintage with Peter Lehmann Wines in the Barossa Valley. Intent on broadening his experience, Peter spent the first half of 2001 working as a contract winemaker with Simeon Wines at Loxton and then travelled to the USA to work the 2001 vintage with Geyser Peak Wines in Sonoma Valley, California. In 2001 Peter joined Langhorne Creek Winery as Assistant Winemaker. Peter continued to grow and challenge himself as the business has expanded and he is now Fullarton Estate Wines' Senior Winemaker. In his spare time Peter enjoys his cricket and football and catching up with family and friends.
